- 2 ears of corn, husked
- 1 large avocado, diced

Instructions
- Heat a grill or skillet to medium-high.
- Add the corn and roast until charred (5–7 minutes).
- Place the red onions on the grill until softened and caramelized.
- Once cooled, chop the corn, avocado, and onions.
- Combine all ingredients in a bowl with fresh herbs.
- Drizzle with your favorite dressing just before serving.
Notes
For a spicier kick, add diced jalapeños or chili powder. Store leftovers in an airtight container for up to 2 days.
