Ingredients
- 4 large russet potatoes, diced
- 1 lb ground beef
- 2 tbsp olive oil
- 1 taco seasoning packet
- 1/4 cup water
- 1 1/2 cups Mexican-style shredded cheese
- Optional toppings: pico de gallo, guacamole, sour cream
Instructions
- Preheat the air fryer or oven to 400°F (200°C).
- Coat diced potatoes with olive oil and taco seasoning.
- Air fry the potatoes for about 20-25 minutes, shaking the basket halfway through.
- Meanwhile, brown and season the ground beef in a skillet.
- Add the taco seasoning and water to the beef, simmering until saucy.
- Layer potatoes on a plate, top with seasoned meat and cheese.
- Finish with your choice of toppings and serve warm.
Notes
For a lighter version, replace the beef with ground turkey or use a plant-based crumble.
