A speedy one-pan skillet dish featuring seasoned ground beef, beans, corn, and gooey cheese, perfect for busy weeknights.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup salsa
  • 2 cups microwaveable ready rice
  • 1 cup shredded cheese

Instructions

  1. Brown the ground beef in a large skillet over medium heat for 6–8 minutes until no pink remains.
  2. Drain excess fat from the skillet.
  3. Add the taco seasoning and a splash of water; cook for 1–2 minutes until fragrant.
  4. Stir in the black beans, corn, salsa, and ready rice, breaking up any clumps.
  5. Reduce heat and simmer for 4–6 minutes until heated through.
  6. Sprinkle the shredded cheese over the top and cover until melted, about 2–4 minutes.
  7. Serve with toppings of your choice.

Notes

For a dairy-free option, use plant-based cheese and a gluten-free taco seasoning.
