Ingredients
- 1 cup granulated sugar
- 1 cup brown sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon salt
- 2 cups grated carrots
- Optional: 1/2 cup chopped nuts or raisins
Instructions
- Cream together the sugars and butter until light and fluffy.
- Add in the eggs and mix until well combined.
- Gradually stir in the dry ingredients, followed by the grated carrots.
- Scoop out portions of dough and place them on a baking sheet, leaving space for spreading.
- Bake at 350°F (175°C) until just set and golden on the edges.
- Cool completely before transferring to an airtight container.
Notes
For best flavor, use freshly grated carrots and allow cookies to chill before baking.
