Ingredients

  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 2 cups grated carrots
  • Optional: 1/2 cup chopped nuts or raisins

Instructions

  1. Cream together the sugars and butter until light and fluffy.
  2. Add in the eggs and mix until well combined.
  3. Gradually stir in the dry ingredients, followed by the grated carrots.
  4. Scoop out portions of dough and place them on a baking sheet, leaving space for spreading.
  5. Bake at 350°F (175°C) until just set and golden on the edges.
  6. Cool completely before transferring to an airtight container.

Notes

For best flavor, use freshly grated carrots and allow cookies to chill before baking.
