Light and fresh chicken spring rolls packed with tender chicken, crisp vegetables, and fragrant herbs, wrapped in delicate rice paper.

Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup carrots, julienned
  • 1 cup bell pepper, sliced
  • 1/2 cup cilantro, chopped
  • 1/2 cup mint, chopped
  • 8 rice paper wrappers
  • Sweet chili sauce or peanut sauce for dipping

Instructions

  1. Prepare the filling by combining cooked chicken, carrots, bell peppers, cilantro, and mint in a bowl.
  2. Soak each rice paper wrapper in warm water until soft.
  3. Layer the filling in the center of each wrapper.
  4. Roll the wrapper tightly, keeping the filling compact.
  5. Optionally, pan-fry the rolls for a golden, crispy finish.
  6. Serve the spring rolls on a platter with dipping sauces.

Notes

Avoid overfilling the wrappers and keep them covered with a damp cloth while working to prevent drying out.
