A refreshing salad with creamy avocado, nutrient-packed chickpeas, and tangy feta, perfect for lunch or dinner.

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 large avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh herbs (parsley or cilantro), for garnish

Instructions

  1. Prepare the chickpeas by draining and rinsing them thoroughly.
  2. Chop the vegetables: tomatoes, cucumber, and red onion into bite-sized pieces.
  3. Combine the chickpeas and chopped vegetables in a large mixing bowl.
  4. Crumble the feta over the top of the salad.
  5. Fold the ingredients together gently to avoid mashing the avocado.
  6. Drizzle the dressing over the salad and toss everything to combine.
  7. Taste and adjust seasoning if necessary.

Notes

Best enjoyed fresh; add avocado just before serving if storing leftovers. Can be customized with grilled chicken or quinoa.
