Ingredients
- 2 ½ cups all-purpose flour
- 1 cup unsalted butter, cold and diced
- ½ cup granulated sugar
- ½ cup cornstarch
- 4 cups fresh apricots, pitted and sliced
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 egg, for egg wash
Instructions
- Combine the flour and butter until it resembles coarse crumbs.
- Add cold water gradually to form the dough.
- Chill the dough before rolling it out.
- Toss the sliced apricots with sugar, cornstarch, and lemon juice.
- Place the filling into the crust and cover with a second layer or lattice top.
- Bake in a preheated oven until golden and bubbling, about 30-40 minutes.
Notes
For added flavor, sprinkle a bit of cinnamon into the filling or mix in some berries.
