Ingredients

  • 2 large cucumbers
  • 3 medium carrots
  • 1 cup Greek yogurt or dairy-free alternative
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Fresh herbs (dill or parsley) for garnish

Instructions

  1. Wash and peel the cucumbers and carrots.
  2. Slice them into thin rounds or matchsticks.
