Ingredients

  • 1 lb diced chicken
  • 1 lb sliced smoked sausage
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 stalks celery, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 4 cups chicken broth
  • 1 ½ cups long-grain white rice
  • 2 tablespoons Cajun seasoning
  • Green onions, for garnish

Instructions

  1. Toss diced chicken, sliced sausage, and chopped vegetables into the Crock Pot.
  2. Add chicken broth and diced tomatoes, then stir in rice and Cajun seasoning.
  3. Cook on low for 6-8 hours until chicken is cooked and rice is tender.
