Tender chicken seasoned with Mediterranean spices, served in warm pitas with refreshing tzatziki sauce.

Ingredients

  • 2 lbs chicken breasts
  • 1/4 cup lemon juice
  • 4 cloves garlic, minced
  • 2 tsp dried oregano
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 cup Greek yogurt
  • 1/2 cucumber, grated
  • 1 tbsp fresh dill, chopped
  • 4 pitas
  • Fresh veggies (cucumber, tomatoes, red onion) for serving

Instructions

  1. Season the chicken with oregano, thyme, rosemary, salt, and pepper.
  2. Add the chicken to the crockpot along with lemon juice and garlic.
  3. Cook on low for 6-8 hours or on high for 3-4 hours.
  4. Prepare the tzatziki sauce by mixing yogurt, grated cucumber, lemon juice, and dill.
  5. Once the chicken is cooked, shred it with two forks.
  6. Assemble the pitas with shredded chicken and tzatziki sauce, and top with fresh veggies.

Notes

For extra flavor, marinate chicken overnight. Use dairy-free yogurt for a vegan version.
