A hearty crockpot chicken and vegetable dinner that simmers to perfection with minimal effort, perfect for busy nights.

Ingredients

  • 4 boneless, skinless chicken thighs or breasts
  • 2 carrots, chopped
  • 2 potatoes, chopped
  • 2 celery stalks, chopped
  • 1 onion, chopped
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried Italian herbs
  • 4 cups low-sodium chicken broth
  • 1 bay leaf
  • Fresh parsley for serving

Instructions

  1. Prep the ingredients by cutting vegetables and seasoning the chicken.
