- 4 boneless, skinless chicken thighs or breasts
- 2 carrots, chopped
- 2 potatoes, chopped
- 2 celery stalks, chopped
- 1 onion, chopped

- 4 cups low-sodium chicken broth
- 1 bay leaf

Instructions
- Prep the ingredients by cutting vegetables and seasoning the chicken.
- Layer everything in the crockpot with vegetables on the bottom and chicken on top.
- Set the cook time to Low for 6-8 hours or High for 3-4 hours.
- Finish and adjust seasoning after the chicken is fully cooked.
- Serve with warm bowls, crusty bread, or over rice.
