Delicious burritos filled with creamy cheese and tender potatoes, perfect for busy nights.

Ingredients

  • 4 medium potatoes
  • 1 cup shredded cheese (cheddar or your choice)
  • 4 large tortillas
  • Salsa for serving
  • Sour cream for dipping

Instructions

  1. Boil or bake the potatoes until they’re fork-tender.
  2. Mash the potatoes and mix in cheese until melted.
  3. Layer the filling onto tortillas without overstuffing.
  4. Roll the tortillas tightly and place them seam-side down on a baking sheet.
  5. Bake until golden brown and crispy.
  6. Serve with salsa or sour cream on the side.

Notes

For a different flavor, try using sweet potatoes or different types of cheese. These burritos can also be frozen for later enjoyment.
