Ingredients
- 4 medium potatoes
- 1 cup shredded cheese (cheddar or your choice)
- 4 large tortillas
- Salsa for serving
- Sour cream for dipping
Instructions
- Boil or bake the potatoes until they’re fork-tender.
- Mash the potatoes and mix in cheese until melted.
- Layer the filling onto tortillas without overstuffing.
- Roll the tortillas tightly and place them seam-side down on a baking sheet.
- Bake until golden brown and crispy.
- Serve with salsa or sour cream on the side.
Notes
For a different flavor, try using sweet potatoes or different types of cheese. These burritos can also be frozen for later enjoyment.
