A quick and easy Italian pasta dish made with garlic and olive oil, perfect for busy weeknights.
Ingredients

- 400g spaghetti
- 4 cloves of garlic, thinly sliced
- 1/2 cup olive oil
- 1/2 teaspoon red pepper flakes
- Salt, to taste
- Fresh parsley, chopped
- Grated Parmesan cheese (optional)
Instructions
- Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente.
- While the pasta is cooking, heat the olive oil in a large pan over medium heat.
- Add the sliced garlic to the pan and cook until golden brown, about 2 minutes. Be careful not to burn the garlic.
- Add the red pepper flakes and stir for another 30 seconds.
- When the pasta is done, reserve 1 cup of the pasta water and then drain the spaghetti.
- Add the drained spaghetti to the pan with the garlic oil. Toss everything together, adding reserved pasta water as needed to help coat the spaghetti.
- Season with salt and mix in the fresh parsley.
- Serve hot with grated Parmesan cheese if desired.
Notes
Watch the garlic closely while cooking, as it can burn quickly. For a stronger flavor, add more red pepper flakes or incorporate vegetables like spinach or cherry tomatoes.
