Ingredients
- 2 cups cooked shredded chicken
- 1 can corn, drained
- 1 cup black beans, rinsed and drained
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 cup chopped cilantro
- 1 lime, juiced
- Salt and pepper, to taste
- 1 cup cooked rice or quinoa
- Optional toppings: cheese, sour cream, hot sauce
Instructions
- Combine the cooked shredded chicken, corn, black beans, cherry tomatoes, avocado, and cilantro in a large bowl.
- Squeeze lime juice over the mixture and season with salt and pepper to taste.
- Serve over a bed of cooked rice or quinoa.
- Add any optional toppings you desire.

Use leftover rotisserie chicken to save time and customize the vegetables based on what you have.
