A flavorful slow-cooked meal with tender chicken, garlic butter sauce, and baby potatoes, perfect for weeknight dinners.

Ingredients

  • 2 lbs boneless, skinless chicken breasts
  • 1.5 lbs baby red potatoes, quartered
  • 3 carrots, cut into chunks
  • 6 cloves garlic, minced
  • 1/2 cup unsalted butter, melted
  • 1 cup chicken broth
  • 2 tsp Italian seasoning
  • 1/2 tsp black pepper
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prep the potatoes and carrots, and mince the garlic.
  2. Layer the chicken and vegetables in the slow cooker.
  3. Whisk together the melted butter, garlic, Italian seasoning, pepper, and chicken broth.
  4. Pour the mixture over the chicken and vegetables, stirring gently to coat.
  5. Cook on low for 6-7 hours or high for 3-4 hours until the chicken is tender.
  6. Finish with chopped parsley before serving.

Notes

For thicker sauce, remove the lid and cook on HIGH for 15-20 minutes at the end, or use a cornstarch slurry.
