A hands-off, savory slow-cooker dish with tender chicken, baby potatoes, and carrots in a rich garlic butter sauce.

Ingredients

  • 1.5 lbs boneless, skinless chicken breasts
  • 1 lb baby red potatoes, quartered
  • 3 carrots, chopped
  • 1/2 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 2 tsp Italian seasoning
  • 1 cup chicken broth
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Chopped parsley for garnish

Instructions

  1. Place the chicken, potatoes, and carrots in the slow cooker.
  2. Whisk together melted butter, garlic, Italian seasoning, chicken broth, salt, and pepper.
  3. Pour the mixture over the chicken and vegetables, then stir gently to coat.
  4. Cover and cook on LOW for 6–7 hours or on HIGH for 3–4 hours until chicken is 165°F (74°C) and vegetables are tender.
  5. Garnish with chopped parsley and serve.

Notes

For a thicker sauce, reduce some liquid in a saucepan or add a cornstarch slurry at the end. Adjust cooking time for frozen chicken.
