Quick and flavorful Garlic Butter Steak Bites, perfect for a busy weeknight dinner.

Ingredients

  • 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
  • 1 medium zucchini, cut into half-moons
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Pat the steak bites dry with paper towels and season them with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add steak bites to the hot skillet in a single layer. Sear for 1-2 minutes per side until browned. Remove the steak from the skillet and set aside.
  4. In the same skillet, add butter. Once melted, add minced garlic and cook for about 30 seconds until fragrant.
  5. Add the zucchini to the skillet and cook for 3-5 minutes, stirring occasionally, until tender-crisp.
  6. Return the steak bites to the skillet. Toss everything together to coat with the garlic butter.
  7. Cook for another 1-2 minutes until the steak is heated through.
  8. Garnish with fresh parsley, if desired, and serve immediately.

Notes

To store leftovers, place them in an airtight container and refrigerate for up to 3 days. Reheat in a skillet over low heat until warmed through.
