Ingredients
- 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
- 1 medium zucchini, cut into half-moons
- 3 tablespoons butter
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: Fresh parsley, chopped, for garnish
Instructions
- Pat the steak bites dry with paper towels and season them with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat.
- Add steak bites to the hot skillet in a single layer. Sear for 1-2 minutes per side until browned. Remove the steak from the skillet and set aside.
- In the same skillet, add butter. Once melted, add minced garlic and cook for about 30 seconds until fragrant.
- Add the zucchini to the skillet and cook for 3-5 minutes, stirring occasionally, until tender-crisp.
- Return the steak bites to the skillet. Toss everything together to coat with the garlic butter.
- Cook for another 1-2 minutes until the steak is heated through.
- Garnish with fresh parsley, if desired, and serve immediately.
Notes
To store leftovers, place them in an airtight container and refrigerate for up to 3 days. Reheat in a skillet over low heat until warmed through.
