Ingredients
- 2 cups cooked quinoa
- 2 chicken breasts, grilled and sliced
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, thinly sliced
- 1 cup Kalamata olives, pitted
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions
- Mix olive oil, red wine vinegar, oregano, salt, and pepper to create a dressing.
- Layer quinoa, sliced chicken, cherry tomatoes, cucumber, red onion, olives, and feta cheese in meal prep containers.
- Drizzle with the dressing.
- Store in the refrigerator for up to 4 days.
- Serve cold or reheat as desired.
Notes
Customize the bowls with additional ingredients like roasted red peppers. They can also be made vegetarian by using grilled tofu.
