A cozy, quick dinner of seasoned ground beef rolled in tortillas, smothered in enchilada sauce, and baked until bubbly.

Ingredients

  • 1 lb lean ground beef
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • 8 tortillas (corn or flour)
  • 2 cups enchilada sauce
  • 1 ½ cups shredded cheese
  • Sour cream, for serving
  • Chopped cilantro or green onions, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. Brown the beef with diced onion in a skillet over medium heat until the onion is translucent and the beef is cooked through.
  3. Add minced garlic, cumin, and chili powder and cook until fragrant.
  4. Spoon the mixture onto each tortilla, roll tightly, and place seam-side down in the dish.
  5. Pour the enchilada sauce evenly over the top and finish with shredded cheese.
  6. Bake uncovered for 20–25 minutes until the sauce is bubbling and the cheese is lightly golden.
  7. Let rest for a few minutes before serving so the filling sets.

Notes

Serve hot with sour cream and lime wedges. Adjust ingredients and spices based on personal taste.
