Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Grate the zucchini and squeeze out excess moisture using a kitchen towel.
- Mix dry ingredients (flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt) in a bowl.
- Combine wet ingredients (eggs, oil, zucchini, and vanilla) in another bowl.
- Fold the wet mixture into the dry mixture until just combined, being careful not to overmix.
- Pour the batter into the prepared pan and smooth the top.
- Bake for about 60 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes before transferring to a wire rack.
