A delightful treat that blends fresh zucchini with warm spices, perfect for any time of year.

Ingredients

  • 2 cups grated zucchini
  • 1.5 cups all-purpose flour
  • 1 cup sugar
  • 2 large eggs
  • 0.5 cup vegetable oil
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 0.5 tsp ground nutmeg
  • 0.5 tsp salt
  • 1 cup walnuts or chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Grate the zucchini and squeeze out excess moisture using a kitchen towel.
  3. Mix dry ingredients (flour, sugar, baking soda, baking powder, cinnamon, nutmeg, and salt) in a bowl.
  4. Combine wet ingredients (eggs, oil, zucchini, and vanilla) in another bowl.
  5. Fold the wet mixture into the dry mixture until just combined, being careful not to overmix.
  6. Pour the batter into the prepared pan and smooth the top.
  7. Bake for about 60 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack.

Ensure the zucchini is well-drained to prevent excess moisture in the loaf. Adjust sweetness by varying the sugar based on your taste preferences.
