Ingredients
- 2 large cucumbers
- 8 oz fresh mozzarella
- 1 cup fresh basil leaves
- Balsamic reduction, to taste
- Salt and black pepper, to taste
Instructions
- Slice the cucumbers into thick rounds.
- Cut the mozzarella into similar-sized pieces.
- Arrange the cucumber and mozzarella slices on a platter, interspersed with fresh basil leaves.
- Drizzle your balsamic reduction over the top just before serving.
Notes
For a variation, try adding sliced avocado or a handful of arugula. Store leftovers in an airtight container in the fridge for up to two days.
