A vibrant and satisfying dish that encapsulates the flavors of summer with tender pasta, sweet corn, fresh herbs, and a zesty dressing.

Ingredients

  • 8 ounces pasta
  • 2 ears sweet corn
  • 1/2 cup plain yogurt
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • 1/4 cup chopped cilantro
  • 1 cup mixed vegetables (bell peppers, cucumbers)
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until just al dente.
  2. Drain it and let it cool slightly.
  3. Grill or sauté the corn until it’s slightly charred.
  4. Prepare the dressing by combining yogurt, lime juice, and spices in a bowl.
  5. Combine pasta and corn in a large mixing bowl along with chopped veggies and herbs.
  6. Pour over the dressing and toss everything until nicely coated.
