Ingredients
- 8 ounces pasta
- 2 ears sweet corn
- 1/2 cup plain yogurt
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- 1/4 cup chopped cilantro
- 1 cup mixed vegetables (bell peppers, cucumbers)
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions until just al dente.
- Drain it and let it cool slightly.
- Grill or sauté the corn until it’s slightly charred.
- Prepare the dressing by combining yogurt, lime juice, and spices in a bowl.
- Combine pasta and corn in a large mixing bowl along with chopped veggies and herbs.
- Pour over the dressing and toss everything until nicely coated.
Notes
Adjust seasoning of the dressing to suit your preference. For a gluten-free option, substitute pasta with quinoa or couscous.
