A quick and flavorful stir-fry featuring tender chicken and vibrant asparagus in a zesty lemon sauce.

Ingredients

  • 1 lb chicken breast, thinly sliced
  • 1 bunch asparagus, trimmed and cut into 2-inch pieces
  • 2 tablespoons avocado oil or grapeseed oil
  • 2 tablespoons lemon juice
  • 1 tablespoon soy sauce
  • Salt and pepper, to taste
  • Optional: sesame seeds or fresh herbs for garnish

Instructions

  1. Heat the skillet over medium-high heat.
  2. Add the sliced chicken and cook until browned and cooked through.
  3. Remove chicken from the skillet and set aside.
  4. Stir-fry the asparagus in the same skillet until bright green and tender-crisp.
  5. Return the chicken to the pan and add the lemon juice and soy sauce.
  6. Simmer briefly to combine flavors, then serve.

Notes

For added flavor, consider mixing in bell peppers or snap peas. Store leftovers in an airtight container for up to three days or freeze for up to two months.
