Ingredients
- 4 medium starchy potatoes, diced
- 1 lb ground beef or turkey
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 2 cups lettuce, shredded
- 1 cup shredded cheese
- Sour cream, for serving
- Cilantro, for garnish
Instructions
- Preheat the oven to 425°F (220°C).
- Spread potatoes on a parchment-lined baking sheet in a single layer.
- Roast for 25–30 minutes, turning once, until edges are golden and crisp.
- In a large skillet over medium heat, cook ground meat until no longer pink.
- Stir in chili powder and cumin, cooking another 4–5 minutes.
- Layer potatoes, meat, tomatoes, avocado, lettuce, and cheese in bowls.
- Finish each bowl with sour cream and cilantro.
