Ingredients

  • 2 large potatoes
  • 1 cup mixed vegetables (bell peppers, onions, corn)
  • 2 tablespoons taco seasoning
  • 1/2 cup cheese (optional)
  • 1 avocado (sliced, for garnish)
  • Fresh cilantro (for garnish)
  • Sour cream (for serving, optional)

Instructions

  1. Preheat oven to 400°F (if roasting).
  2. Cook potatoes in boiling water or bake for 20-30 minutes until tender.
