Ingredients

  • 2 large potatoes
  • 1 lb ground meat (beef, chicken, or turkey)
  • 1 tsp taco seasoning
  • 1 cup diced bell peppers
  • 1 cup corn
  • 1 cup black beans (rinsed and drained)
  • 1 avocado, diced
  • 1 cup shredded cheese
  • Sour cream (for serving)
  • Fresh cilantro (for garnish)
  • Olive oil
  • Salt and pepper (to taste)

Instructions

  1. Preheat the oven to 400°F (200°C). Cut the potatoes into cubes, toss with olive oil, salt, and pepper, and spread evenly on a baking sheet. Roast for 25-30 minutes, or until crispy and golden.
  2. Cook the ground meat in a skillet over medium heat until browned. Add taco seasoning and stir well.
  3. Mix the roasted potatoes, cooked meat, diced bell peppers, corn, and black beans in another bowl.
  4. Top with diced avocado and shredded cheese.
  5. Serve with sour cream and garnish with fresh cilantro. Enjoy your meal!

Notes

For extra flavor, add diced onions or jalapeños to the meat. For a spicy kick, use spicy taco seasoning or hot sauce. Sweet potatoes can also be used for a twist.
