Ingredients
- 2 large potatoes
- 1 lb ground meat (beef, chicken, or turkey)
- 1 tsp taco seasoning
- 1 cup diced bell peppers
- 1 cup corn
- 1 cup black beans (rinsed and drained)
- 1 avocado, diced
- 1 cup shredded cheese
- Sour cream (for serving)
- Fresh cilantro (for garnish)
- Olive oil
- Salt and pepper (to taste)
Instructions
- Preheat the oven to 400°F (200°C). Cut the potatoes into cubes, toss with olive oil, salt, and pepper, and spread evenly on a baking sheet. Roast for 25-30 minutes, or until crispy and golden.
- Cook the ground meat in a skillet over medium heat until browned. Add taco seasoning and stir well.
- Mix the roasted potatoes, cooked meat, diced bell peppers, corn, and black beans in another bowl.
- Top with diced avocado and shredded cheese.
- Serve with sour cream and garnish with fresh cilantro. Enjoy your meal!
Notes
For extra flavor, add diced onions or jalapeños to the meat. For a spicy kick, use spicy taco seasoning or hot sauce. Sweet potatoes can also be used for a twist.
