Ingredients
- 3 large ripe tomatoes
- 1/4 cup extra virgin olive oil
- 2 tablespoons balsamic vinegar or lemon juice
- 1/4 cup fresh herbs (basil or parsley), chopped
- Salt and pepper to taste
Instructions
- Slice the tomatoes into wedges or halves.
- Combine olive oil, vinegar or lemon juice, and chopped herbs in a bowl.
- Mix well before gently tossing in the tomatoes.
- Let the mixture marinate at room temperature for at least 30 minutes.
- Serve and enjoy!
