A vibrant and refreshing chicken pasta salad packed with Mediterranean flavors, perfect for any occasion.

Ingredients

  • 8 oz whole wheat pasta
  • 2 cups cooked chicken, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, diced
  • 1/2 cup Kalamata olives, pitted and sliced
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp garlic powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a pot of boiling water until al dente, then drain and let it cool.
  2. Grill or sauté the chicken until golden brown and cooked through, then slice into bite-sized pieces.
  3. In a large mixing bowl, combine the pasta, chicken, diced vegetables, and dressing, tossing gently to coat.
  4. Chill in the fridge for a short while to allow flavors to mingle.
  5. Serve in a large bowl garnished with fresh herbs.
