Ingredients

  • 1 cup lentils
  • 1 bell pepper, diced
  • 1 cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice

Instructions

  1. Rinse lentils under cold water.
