Ingredients

  • 1 cup all-purpose flour
  • 1 cup sugar
  • 2 large eggs
  • 1/2 cup milk
  • 1/4 cup fresh lemon juice
  • 2 tablespoons lemon zest
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • Powdered sugar for icing

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Combine your dry ingredients (flour, baking powder, baking soda, and salt) in one bowl.
  3. Mix your wet ingredients (eggs, milk, lemon juice, and lemon zest) in another bowl.
  4. Fold the dry ingredients into the wet ingredients until just combined.
  5. Pour the batter into mini loaf pans.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
  7. Cool before drizzling with powdered sugar icing.

Notes
