- 1 cup all-purpose flour
- 1 cup sugar
- 2 large eggs
- 1/2 cup milk
- 1/4 cup fresh lemon juice
- 2 tablespoons lemon zest
- 1 teaspoon baking powder

Instructions
- Preheat your oven to 350°F (175°C).
- Combine your dry ingredients (flour, baking powder, baking soda, and salt) in one bowl.
- Mix your wet ingredients (eggs, milk, lemon juice, and lemon zest) in another bowl.
- Fold the dry ingredients into the wet ingredients until just combined.
- Pour the batter into mini loaf pans.
- Bake for 20-25 minutes or until a toothpick comes out clean.
- Cool before drizzling with powdered sugar icing.
Notes
For a gluten-free option, use almond flour or a gluten-free all-purpose blend. You can also add poppy seeds or other citrus for added flavor.
