A delightful and moist old-fashioned zucchini bread recipe that utilizes summer’s bounty, perfect for breakfast, snacks, or dessert.

Ingredients

  • 2 cups grated zucchini
  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 2 large eggs
  • 1/2 cup vegetable oil
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract

Instructions

  1. Grate the fresh zucchini and lightly squeeze out excess moisture.
  2. Mix together the wet ingredients in a large bowl until well combined.
  3. Whisk together the dry ingredients in another bowl.
  4. Gradually mix the dry ingredients into the wet batter until just combined.
  5. Pour the batter into a prepared loaf pan.
  6. Bake in a preheated oven at 350°F (175°C) for 50-60 minutes or until golden brown and a toothpick comes out clean.

Notes

Let the loaf cool in the pan for about 10 minutes before transferring to a wire rack to avoid sogginess.
