Ingredients
- 2 cups grated zucchini
- 1 1/2 cups all-purpose flour
- 1 cup granulated sugar
- 2 large eggs
- 1/2 cup vegetable oil
- 1 tsp baking soda
- 1/2 tsp baking powder
- 1/2 tsp salt
- 1 tsp vanilla extract
Instructions
- Grate the fresh zucchini and lightly squeeze out excess moisture.
- Mix together the wet ingredients in a large bowl until well combined.
- Whisk together the dry ingredients in another bowl.
- Gradually mix the dry ingredients into the wet batter until just combined.
- Pour the batter into a prepared loaf pan.
- Bake in a preheated oven at 350°F (175°C) for 50-60 minutes or until golden brown and a toothpick comes out clean.
Notes
Let the loaf cool in the pan for about 10 minutes before transferring to a wire rack to avoid sogginess.
