Light and refreshing no-bake raspberry cheesecakes, perfect for summer gatherings.

Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups fresh raspberries
  • 2 tbsp granulated sugar

Instructions

  1. Mix the graham cracker crumbs and melted butter until crumbly.
  2. Press the mixture firmly into the bottom of serving cups.
  3. Beat the cream cheese with powdered sugar and vanilla until smooth.
  4. Spoon the filling over the crust in each cup and let it chill until set.
  5. Combine raspberries and granulated sugar to make raspberry sauce, then top each cheesecake.

Notes

For best texture, use room temperature cream cheese and do not skip the chilling step.
