Ingredients
- 1 1/2 cups graham cracker crumbs
- 1/4 cup unsalted butter, melted
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 tsp vanilla extract
- 2 cups fresh raspberries
- 2 tbsp granulated sugar
Instructions
- Mix the graham cracker crumbs and melted butter until crumbly.
- Press the mixture firmly into the bottom of serving cups.
- Beat the cream cheese with powdered sugar and vanilla until smooth.
- Spoon the filling over the crust in each cup and let it chill until set.
- Combine raspberries and granulated sugar to make raspberry sauce, then top each cheesecake.
Notes
For best texture, use room temperature cream cheese and do not skip the chilling step.
