Delicious and moist zucchini bread, perfect for breakfast or snacks, utilizing fresh zucchini and warm spices.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 2 large eggs
  • ½ cup vegetable oil or applesauce
  • 1 ½ cups grated zucchini (squeezed dry)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grate the zucchini and squeeze it gently to remove excess moisture.
  3. In a mixing bowl, combine flour, sugar, baking soda, cinnamon, nutmeg, and salt.
  4. Whisk together the eggs and oil/applesauce in a separate bowl.
  5. Fold in the zucchini to the wet mixture.
  6. Gently mix the dry ingredients into the wet ingredients until just combined.
  7. Pour the batter into a greased loaf pan.
  8. Bake for 50–60 minutes or until a toothpick comes out clean.

Notes

Ensure to squeeze out excess moisture from the zucchini to avoid a soggy loaf. Check for doneness with a toothpick.
