- 1 ½ cups all-purpose flour
- 1 cup granulated sugar

- 2 large eggs
- ½ cup vegetable oil or applesauce
- 1 ½ cups grated zucchini (squeezed dry)
Instructions
- Preheat your oven to 350°F (175°C).
- Grate the zucchini and squeeze it gently to remove excess moisture.
- In a mixing bowl, combine flour, sugar, baking soda, cinnamon, nutmeg, and salt.
- Whisk together the eggs and oil/applesauce in a separate bowl.
- Fold in the zucchini to the wet mixture.
- Gently mix the dry ingredients into the wet ingredients until just combined.
- Pour the batter into a greased loaf pan.
- Bake for 50–60 minutes or until a toothpick comes out clean.
Notes
Ensure to squeeze out excess moisture from the zucchini to avoid a soggy loaf. Check for doneness with a toothpick.
