Pecan Praline Zucchini Bread

A delicious zucchini bread with a crunchy pecan praline topping, perfect for breakfast or as a snack.

Ingredients

  • 2 cups grated zucchini
  • 1 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup coconut oil or vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped pecans
  • 1/2 cup pecan praline topping (store-bought or homemade)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Combine the dry ingredients in one bowl and the wet ingredients in another.
  3. Mix the dry and wet ingredients together until just combined.
  4. Fold in the grated zucchini and half of the pecans.
  5. Pour the batter into the prepared loaf pan and sprinkle the pecan praline topping on top.
  6. Bake for about 60 minutes, or until a toothpick comes out clean.

Notes

Squeeze out excess moisture from the grated zucchini before adding it to the batter to prevent sogginess. Check for doneness a few minutes early by using a toothpick.
