Ingredients
- 2 cups grated zucchini
- 1 cup light brown sugar
- 1/2 cup granulated sugar
- 1/2 cup coconut oil or vegetable oil
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup chopped pecans
- 1/2 cup pecan praline topping (store-bought or homemade)
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- Combine the dry ingredients in one bowl and the wet ingredients in another.
- Mix the dry and wet ingredients together until just combined.
- Fold in the grated zucchini and half of the pecans.
- Pour the batter into the prepared loaf pan and sprinkle the pecan praline topping on top.
- Bake for about 60 minutes, or until a toothpick comes out clean.
Notes
Squeeze out excess moisture from the grated zucchini before adding it to the batter to prevent sogginess. Check for doneness a few minutes early by using a toothpick.
