Ingredients
- 2 cups fresh rhubarb, chopped
- 1 cup sugar (or honey/maple syrup as a substitute)
- 1 teaspoon cinnamon (or ginger, optional)
Instructions
- Chop the rhubarb into small pieces and combine it in a pot with sugar and spices.
- Bring the mixture to a gentle boil over medium heat, stirring occasionally.
- Cook until the rhubarb breaks down and softens.
- Blend the mixture using an immersion blender or regular blender until smooth.
- Return to heat and simmer for a few more minutes until thickened to desired consistency.
Notes
Store rhubarb butter in an airtight container in the refrigerator for up to two weeks or freeze for longer storage. Taste and adjust the sugar levels as needed.
