Ingredients

  • 4 cups fresh greens (e.g., lettuce, spinach)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/2 red onion, thinly sliced
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • Fresh herbs (parsley or basil) for garnish

Instructions

  1. Cook the chicken on medium heat until golden brown and reaches an internal temperature of 165°F.
  2. Let it rest before slicing into bite-sized pieces.
