A cozy, hands-off one-pot meal featuring tender chicken and fluffy rice infused with lemon, garlic, and herbs.

Ingredients

  • 4 chicken breasts
  • 1 cup long-grain white rice
  • 2 cups low-sodium chicken broth
  • 1 lemon (juice and zest)
  • 4 cloves garlic, minced
  • 2 teaspoons dried thyme
  • 2 teaspoons dried rosemary
  • Salt and pepper to taste
  • Optional: Frozen peas or diced carrots

Instructions

  1. Season the chicken breasts with salt and pepper.
  2. Add the chicken to the slow cooker with lemon juice, zest, garlic, and broth.
  3. Sprinkle the rice over the top without stirring.
  4. Cook on low for 6–7 hours or high for 3–4 hours.
  5. Fluff the rice and stir everything together before serving.

Notes

For a vegetarian version, replace chicken with cubed tofu or chickpeas and use vegetable broth. Adjust cooking times accordingly.
