Ingredients
- 4 chicken breasts
- 1 cup long-grain white rice
- 2 cups low-sodium chicken broth
- 1 lemon (juice and zest)
- 4 cloves garlic, minced
- 2 teaspoons dried thyme
- 2 teaspoons dried rosemary
- Salt and pepper to taste
- Optional: Frozen peas or diced carrots
Instructions
- Season the chicken breasts with salt and pepper.
- Add the chicken to the slow cooker with lemon juice, zest, garlic, and broth.
- Sprinkle the rice over the top without stirring.
- Cook on low for 6–7 hours or high for 3–4 hours.
- Fluff the rice and stir everything together before serving.
Notes
For a vegetarian version, replace chicken with cubed tofu or chickpeas and use vegetable broth. Adjust cooking times accordingly.
