Instructions
- Cream together the butter and sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Mix in the fresh lemon juice and zest.
- Combine flour, baking powder, baking soda, and salt in a separate bowl.
- Fold the dry ingredients gently into the wet mixture to form a dough.
- Let the dough rest briefly while you preheat the oven to 350°F (175°C).
- Drop spoonfuls of dough on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until just golden around the edges.
- Cool on the baking sheet before transferring to a wire rack.
