A classic Southern potato salad that’s creamy, hearty, and perfect for picnics and family gatherings.

Ingredients

  • 4 large potatoes (Russets or Yukon Golds)
  • 1 cup mayonnaise
  • 2 tablespoons vinegar
  • 1 tablespoon mustard
  • 1/2 cup chopped onions
  • 1/2 cup chopped celery
  • 1/2 cup pickles (diced)
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes in salted water until tender but still firm.
  2. Drain and cool the potatoes before preparing the dressing.
  3. Combine mayonnaise, vinegar, and mustard in a bowl, stirring until smooth.
  4. Fold the cooled potatoes into the dressing.
  5. Add in the chopped onions, celery, pickles, and season to taste.
  6. Mix until everything is coated evenly.
  7. Serve chilled, garnished with paprika or fresh herbs.

Notes

For a lighter dressing, consider using Greek yogurt. Adjust seasonings to taste and let the salad sit for a few hours for optimal flavor.
