A moist and subtly spiced bread made with grated zucchini, perfect for any season.

Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup grated zucchini
  • 1 cup brown sugar
  • ½ cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp baking soda
  • ½ tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ tsp salt
  • Optional: chocolate chips, nuts, or dried fruits

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. Combine the dry ingredients in one bowl and wet ingredients in another.
  3. Fold the mixtures together gently until just combined.
  4. Bake until golden brown and a toothpick inserted into the center comes out clean, about 50-60 minutes.
  5. Allow the bread to cool briefly before slicing and serving.

Notes

For the best results, taste your batter before baking and adjust sweetness if necessary. Lightly squeeze the grated zucchini to remove excess moisture.
