- 1 pound shrimp, peeled and deveined
- 8 small tortillas
- 1 ripe mango, diced
- 1/2 red onion, diced
- 1 jalapeño, minced
- 1 lime, juiced
- Salt to taste

Instructions
- Heat a skillet over medium-high heat and add a drizzle of olive oil.
- Season the shrimp with salt and pepper, then add to the hot skillet.
- Cook until the shrimp are pink and opaque, about 3-5 minutes.
- Meanwhile, mix together mango, red onion, jalapeño, lime juice, and salt in a bowl for the salsa.
- Assemble the tacos by placing shrimp and salsa on tortillas.
- Garnish with fresh cilantro and serve warm.
Notes
