Ingredients

  • 1 pound shrimp, peeled and deveined
  • 8 small tortillas
  • 1 ripe mango, diced
  • 1/2 red onion, diced
  • 1 jalapeño, minced
  • 1 lime, juiced
  • Salt to taste
  • Pepper to taste
  • Olive oil, for cooking
  • Fresh cilantro, for garnish

Instructions

  1. Heat a skillet over medium-high heat and add a drizzle of olive oil.
  2. Season the shrimp with salt and pepper, then add to the hot skillet.
  3. Cook until the shrimp are pink and opaque, about 3-5 minutes.
  4. Meanwhile, mix together mango, red onion, jalapeño, lime juice, and salt in a bowl for the salsa.
  5. Assemble the tacos by placing shrimp and salsa on tortillas.
