Spring Pea & Herb Pasta

A delightful dish bursting with vibrant flavors of fresh herbs and tender peas, perfect for any spring-themed gathering.

Ingredients

  • 8 oz pasta (spaghetti or fettuccine)
  • 1 cup fresh spring peas (or frozen peas)
  • 2 cups burrata cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh mint, chopped
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in a pot of salted water until al dente.
  2. Drain the pasta, reserving 1 cup of the cooking water.
  3. Sauté garlic in olive oil in a large pan until fragrant.
  4. Add fresh herbs and peas to the pan, allowing them to warm through.
  5. Combine the pasta with the herb mixture, adding reserved pasta water for creaminess.
  6. Top with burrata, letting it melt slightly before serving.

Notes

Best served immediately, garnished with additional fresh herbs and a drizzle of olive oil.
