A vibrant bowl of grilled chicken, sweet corn, and lime-infused rice, perfect for busy nights and meal prep.

Ingredients

  • 2 cups cooked rice
  • 1 pound grilled chicken, diced
  • 1 cup sweet corn, charred
  • 1 red onion, diced
  • 1 bell pepper, diced
  • 1 avocado, sliced
  • 1 lime, juiced
  • 1 tablespoon olive oil (optional)
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Dice the grilled chicken and check that it’s cooked through (an internal temperature of 165°F / 74°C).
  2. Char the corn on a hot grill or in a skillet until dark brown spots appear.
  3. Combine the rice, chicken, corn, onion, and bell peppers in a large bowl.
  4. Dress with lime juice and a little oil if desired.
  5. Toss gently to avoid mashing the avocado.
  6. Serve immediately or chill based on preference.

Notes

Great for meal prep and can be customized with various toppings. Keep avocado separate until serving for the best texture.
