A vibrant street corn pasta salad bursting with flavor, perfect for summer gatherings or quick weeknight dinners.

Ingredients

  • 8 ounces of pasta
  • 2 cups fresh corn
  • 1/4 cup lime juice
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1/4 cup chopped cilantro
  • Salt and pepper to taste
  • Chili powder (optional, for garnish)

Instructions

  1. Cook the pasta until al dente, then drain and rinse under cold water.
  2. Grill or sauté the fresh corn until slightly charred.
  3. Whisk together the lime juice, mayonnaise, and sour cream in a large bowl.
  4. Fold in the cooked pasta and grilled corn along with chopped cilantro.
  5. Season with salt and pepper to taste.
  6. Chill the salad in the refrigerator before serving.
